Do the iDevices use the same Safari?

I ask, because the iPad is big enough to view Desktop versions of most webpages. Yet, many out their are defaulting to the mobile versions. I can see this being a problem. Some like ESPN ask you which version you would like to view. Others do not, and just default to the mobile versions, and even worst some have no way of switching. Maybe the iPad can be recognized differently from the other iDevices, and be given the better viewing experience?
