Upgrade or Restore?

Just to enquire what is the difference in these two actions when Apple ask you to make a choice on Sync?
And which should I choose...? Hmmmmm. So far I have Upgraded.

Thanks Tim, will continue to Upgrade at regular intervals when Apple indicate a new version is out (uness I have issues needing a Restore)
