How can I get Safari in the incognito mode and how can its there?

To get Safari into private browsing mode, tap this icon at the top right in Safari:

You'll find Safari like this next:

Tap Private to get into Private Browsing Mode.
Safari will look like this at first:

Tap the + at the top right, to be able to open a new site. You'll notice the difference between private browsing and the usual way to look at websites because of the dark theme at the top:
