Because some videos arent available for mobile devices on youtube. Most are but not all of them.
I suggest you get youplayer.
Its just like the old youtube app. Maybe better! Its much better than the jasmine app people are suggesting. Jasmine has way too many restricted feeds.

This is what I see when I try to watch videos...

And I get it on EVERY video...

Its not just YouTube. i cant watch any videos, and it is not a Java issue. I'm running version 6.1 (10b141) .
This has been the case since I updated the software about 10 days ago.
