Are there any apps that let you highlight a word in a browser and get a popup definition like the kindle?

This is simply not going to be possible in the iPad because the apps are isolated ('sandboxed') and cannot interact with each other. So a dictionary app would not have access to the text in a browser, except insofar as iOS allows such interaction to take place, which is very limited.

iOS 5 is supposed to include a universal dictionary. I'm (reasonably) sure all of Apple's apps will support it. I don't know if it will be automatically available in other apps or whether developers will have to add the feature.
