Jailbreak

Hi. Some advice please. I had an iPad1 for 9 months, really enjoyed it so bought myself an iPad2 and gave my old one to my wife.
My question is, what does Jailbreak mean? If it means that I can use some programmes that I have on my laptop that won't work on my iPad then it would be useful. If I do decide to go for it I gather that as long as I have backed up to iTunes I could always revert to the original. Another thing, could I jailbreak my old iPad1, if so I could use that to practice on.
I'm not interested in playing lots of games, I'm in my early 70's, but I enjoy using the iPad.
Any advise would be gratefully received.
