DH started making the beignets with apple chunks mixed in maybe eight times ago, and he's been tinkering with how to get the apple ratio and texture right. He's getting better and better at it. He says he mixes the apple chunks with other ingredients before adding water, to get it to coat properly, and has to make sure the apple chunks aren't too big, because you want to flatten the dough thinly enough to get the beignets to cook through properly.
