Notes Plus has an audio record feature that let's you, say, record a lecture while typing and/or handwriting comments.

There is also a free voice recording app - it's for the iPhone but works just fine on the iPad - Blue Fire.

The apps 'talking ben' , 'talking tom' and 'talking gina' are a great laugh, especially when you're drunk
