How do I set UK time, it seems to have changed since I upgraded, it is showing US time

Enable the right time zone in Settings - General - Date & Time. Location Services have to be enabled shortly, until the time your iPad shows is right.

You can also get the iPad to set the time automatically in the same settings as suggested above.
