Streaming HD video

I currently store my HD videos on my Windows Home Server and stream them to my Windows 7 HTPC. The vast majority are 1080p and in an MKV container.

What options do I have if I want to stream these to an iPad? Is it even possible or would I have to downsize them to 720p?
