no wifi

hi I recently purchased an ipad from fleabay which had no wifi and a cracked screen.
Having repaired many of these units before I asked the previous owner to sign out of their account before postage which they kindly did.
I have now replaced the digitizer and the wifi cable and still have no wifi.
Somehow I have managed to sign into my apple id and have find my ipad switched on and cant sign out without wifi.
Also when I log into my icloud account the device is not shown.

Is it possible to use iTunes to sign out of the ipad when connected via the 30pin cable?

I plan on doing a system update but don't want to get stuck in activation lock cycle.

Prahaps I should simplify the question.
Is it possible to sign out of an ipad with out using wifi ?

If you are talking about getting past the lock code (if you have the code) yes. If you are talking about logging into your iTunes account, email and the like I have to think not.
