Can I transfer an email recipient from mail to the contact list without typing in the name and email address?

Hi, welcome to iPF!
It is possible. When you've opened the mail, tap the name/address of the recipient. You will see this:
Now tap "Create new contact". The next popup will give you the option to add further information. Don't forget to tap "Save".
My screenshot shows "Sender". It will work the same way with "Recipient".
