How to lock CAPS

New to iPad 2, can anyone please tell me how to lock down the caps so that I can type a word in capitals?

Tap one the arrow keys at the left or right twice. They'll look like this afterwards:

AND YOU'LL WRITE IN CAPITALS. To get it back to normal, tap one of the arrow keys once.

Tor to CONTINUALLY write in CAPITALS keep the key pressed while you type.

Unfortunately, it is not like a regular keyboard in that if you need to type a number, the caps lock is turned off again.

There are 3 states of the caps key: Lowercase, One uppercase and all caps.
No Tap = this
One Tap = This
Two QUICK Taps = THIS

Two quick space bar = an ending period like this.
If you want we're, type weree = we're

There are other typing tricks, but I can't think of them now. Maybe others can add some.
