I think when you use diamonds to speed up icecream (for example), it counts the hours as if the ice cream was actually produced.
Maybe that's the reason?

You mean for slots? Nope. I always queue the longest items to make overnight. So strawberry ice creams and popsicles are usually made while I sleep, same with the 3-4 hours cakes. The only machines I have full mastery on are sugar and dairy right now.
