iPad and iPhone have linked - any help with unlinking?

My husband set up his iPad months ago using an email address that I also used for iTunes so we could share music. At the time I had no apple devices, only used iTunes for music on the laptop.

A few months later I got an iPhone and set it up with the same email address. Now our accounts are linked and we can't seem to find a way of unlinking them. I have gone into my iTunes account and removed the iPad from my devices, as suggested by an apple customer service agent, but when I use the game centre on iPhone it still has my husbands name and his old scores etc there. with no option to create my own game centre profile. This is really bugging me.

His iPad recently did an update, and though he has set himself up a new apple ID, when the iPad came on after the update it still has my apple ID on there with no option for him to put his own apple ID in to get it going again.

When we went into setting>iTunes + app store to try and change it, it comes up with someone else's apple ID (think poss a work colleague but not sure why they would have logged themselves into my husband's device, we can't figure it out.) My imessages and texts go right to his iPad, but his own gmail goes to it too so we're really confused.

Is there an easy way we can sever all links between iPhone and iPad without either of us losing our stuff? My iPhone is backed up regularly using iTunes but my husband does not have an iTunes account so has never backed anything up.

We have searched every forum for advice and just can't seem to do it. Can anyone help here? Thank you.

Thanks we have tried these places already and just told to set up a new apple ID for each device, which we have done and isn't workin.
