I've downloaded an excellent app to organize my files and apps, the name is "Categories" but lately when I create a new file the icon image doesn't appears, it just appears completely white.

Some suggestions???

Respring or reboot your iPad, I had this issue as well when I first started it.

Easiest way to respring is to change the language settings or to download SB Settings, swipe the status bar at the top and hit respring...to reboot hold the power and lock buttons for about ten seconds.

Don't expect support for apps you get from Cydia.

So which app can I use with iTunes to organize folders and apps????

I didn't knew about Cidya!!! I just bought my ipad with Cidya installed!

Cydia installs 3rd party apps not endorsed and certainly not supported by Apple. There is nothing right now from Apple, however iOS4 will be released soon which will have this functionality built right in without needing an App for that.
