Uploaded photos not in sequential order (Stock)

The Photos app sorts by date. There is no way to change this.
To gain more control over your albums you'll need to get a third party photo managment app. There are many, and depending on your use case there is probably one almost exactly the way you want it.
Photo Manager Pro is often recommend on the forum. For my limited uses the built in Photos app is adequate, so I don't have recommendations of my own to add.
