Hi Johanna - we've been eating American bison (erroneously but usually called buffalo) for years - wife use to order 'buffalo filet mignons' from the web (usually from the plains states), but the prices have really escalated (plus overnight shipping w/ dry ice is expensive) - this meat is really lean (pretty much like a chicken breast relative to fats & cholesterol) so medium rare is ideal for a cooking temperature - BUT we now mainly order the meat in restaurants if available.

We go to Blowing Rock, NC often - in the mountains & just 90 minutes from home (discussed in my NC Mountains travel thread) - a favorite restaurant there is called the Gamekeeper - their expertise is offering 'wild' game meats - on our last visit, Susan had the buffalo (described in the quote below); I had the venison (see the menu link HERE) - the ostrich (which is actually from a farm in our NC county) is superb. HMMM - I'm getting hungry! Dave :)

Buffalo - grilled buffalo, potato gnocchi, caramelized onion, chicken-of-the-woods mushrooms, tomato, blue cheese, egg mousse.
 
Bison is good. Better than beef for sure, but wait until you eat moose. Or even better, elk. Or, best of all, pronghorn.

A friend we visit on trips to Colorado is an avid big-game hunter, and he always has some treats for us.

I have had moose but found it too gamey! I was just a kid though so maybe I would like it now?

squib..moose isn't gamey..cook it in a v8 juice base and it' the best.

Well, like I said, "i was a kid " up in the rough country of cowboys and cowhands, I don't think they cared how it was cooked! I am pretty sure that had something to do with the gameyness. My cousin lives in Prince George and like you, knows how to tenderize it! :)

that is the root structure of a large tree on top of the rock.That is a marker to show the water level of The Old Man River during this years devastating floods.Ruined the fishing and spoilt some favorite places.Sent us looking for new rivers.
