I bought the cocoa trees and now have them producing but I can't figure out what to do with them. I don't have the option to make choc ice cream or pies .......

You have a head start, so you're in good shape!
For a while I had some fruit trees and bushes before I had the jam maker or juice maker. I held on to a few of them so I'd be ready to start jamming and juicing as soon as I got the machines, and I sold some. I also left some of the the trees with fruit on them ready to pick for when I needed more. When I have a bunch of trees or berry bushes, and now the cacao trees, I try to pick them in a rotation so that at any given time there are always some trees which are ready to be picked or which will be ready in the next few hours. That way if a boat asks for more than I have, I can get more without searching the newspaper. Although now that they have the berry achievement, it seems there are always a lot of fruits in the newspaper.

I'm level 31 right now so I'm thinking of going for captain III before the orders get more complicated. I'm making space in my barn to stock up and have about ten extra each of axes and saws... Great to hear you benefited from this forum

Some tips on getting Captain III: once you know what the next boat wants, try to stock up before it comes. I think in level 31 you still doesn't have jam maker? Then lucky for you ^^ coz they take really looong time to produce.. On the other hand, some basic items such as sugar can be requested as much as 60 items in one boat, so be prepared!

Also, you can delay the next boat by not opening the game before the gap time runs out. Even if the gap time is several seconds left, if you leave the game and open it again 5 hrs later or even the next day, the boat will only arrive at the time you open the game. This comes very handy when you're waiting for all production queues to finish cooking, or when you want to play only on free time so you'll have enough time to send request to the forum, wait for response, go back & forth between your farm & neighbors.
