This same thing has happened to me. I hadn't been able to play for a few days because it immediately crashes, after months of working with no issue. I took your advice and signed out of Game Center and that worked. I played for a few minutes while signed out, tried signing back in, and the crashing problem happened again...So obviously, that's a bummer since without GC active, you loose all the access to your friends' shops.
The only thing I can suggest is try playing without Game Center enabled and see what happens. That's exactly what happened to me. I sent an email to Stupercell but I'm not holding my breath. Sign out of Game Center and then try starting Hay Day and see if that works. Then see what happens. I would suggest sending the email to them as well just in case that is what helps you fix it. If it's the same problem as mine, maybe a bunch of people are having the same problem....Hope this helps.
