Ninjaed is when you want to set something up for someone and they don't get it because someone snuck in and filled the order before you could.. like a ninja! Lol

Please can someone tell me how I can HELP people, I see requests, but am unsure how I can help xx

Just catching up and not sure anyone answered this for you. You can help by :
- filling crates when neighbours need help (you can find them in the bottom right of your HayDay screen by clicking the icon with the three people)
- watering trees and plants on neighbor's farms, indicated by the exclamation point and they tend to jump or shake when in with other green plants
- participating in forums like this one and answering when someone asks for help and you have the item they are looking for and want to trade or help out by selling your items.

Make sure you review the trading guidelines, know about "wheating" and understand if you are trading for something else or selling, and the terms of the deal -- either default or full price. Most of those details are done via PM, not in the forum...

I don't have the trading guidelines on this machine...maybe someone else can post them if you aren't familiar with them.
