Tap on the top part of the message you want to reply to, where the avatar is. On the left you will then see a white square, tap on that. The top band of the message will go yellow. Then scroll up or down to find the next message you want to include and repeat. When you've done them all, tap on the curved arrow thingy at the top right, you will see Multiquote as an option.
