Made a dinner out of appetizers: Mexican sweet corn cakes, chicken quesadilla and tortilla soup, with a mojito and a margarita on the rocks.

I make my own Xmas puds. I know what's in them and put what I like in them. Lashings of archers, brandy etc... Oh and fruit of course. I'm baking my Xmas cake soon. I'll have to see what's in the larder

Hash Browns ala Admiral.

4 1bs ( 2 kilos ) frozen hash browns.
1 large tub sour creme 14%.
2 cans cream of mushroom soup (good stuff)
1/4 cup butter
1-2 cups shredded marble cheese
1/4 to 1/2 cup parmasean cheese.

Mix all ingredients together except parmasean cheese.

Divide the load between two casserole dishes.
Cooks better that way.
Sprinkle parmasean cheese on top.
Bake in 375 oven for 1hr 15 minutes.

Here's the finished product - Potatoes au gratin ala Admiral. Notice the crisp finish on the parmasean cheese dusting.

Ramsay I dare you to not say ... "that's amazing." ;)

You had an egg taco? That sounds good, how do you hold it, or is it a casserole kind of thing, Goofy?

I made chicken fajitas and grilled some green peppers and Hungarians from our garden for toppings. It was yummy delish! ;)

It's with a regular soft tortilla...
Not too much egg taste in it :(, mainly potatoe & chorizo
