Don't think you can.. Just password protect the whole iPad is the only way I know

Unfortunately, there is no way to password protect a stock iPad. However, if you jail break, there are several tweaks that will allow you to set passwords on apps or folders (or both).

But, as mentioned, the lock screen password is the only option on a stock iPad. Sorry.
