Unless I am mistaken (which is probable), I don't remember having to re-select a printer every time I want to print something. This appears to be a new "feature" of IOS7. Didn't it remain the selected in previous IOS versions? I only had and still have one HP AirPrint compatible printer.

Yes, it used to. And no, it does not appear to do so anymore.
It does put recent printers at the top of the list, which might make it better for office/business users with multiple printers but isn't terribly friendly to the one printer user like you.
It's kind of neutral for me, since I print to folders on my computer more often than an actual printer. I have several of those folders, each of which acts/looks like a printer choice.
