Lost all my iBooks

Were they purchased in the iBooks Store?
If so, then select the Purchased tab at the bottom of the screen and re-download the ones you want. You can also tap the Catagory menu at the top center and turn off Hide iCloud Books. This will show you all your iBooks. The ones not stored locally will have a cloud icon. Tap on them to download and read.
Books not purchased in the iBooks store will have to be downloaded again from wherever you got them.
That said, I'm pretty sure there is no Delete All option in the iBooks app.
