iTunes tells me that I have used 6.6gb of memory but the sum of my app memory requirements is only 2.6 gb. What gives??

The difference is usually accounted for by what iTunes defines as 'Other' - for example maps database, videos, music etc.

Don't think that's it, Tim. iTunes gives me a separate memory allotment fo 'other'. The iTunes memory count is roughly 3 times the sum of the individual apps.
