Notes problem--nothing there

My wife has used "notes" to write adaily journal on her iPad2. Turning it onyesterday, there was nothing there.
Make matters worse, her PC has failed.
She has a brand new iMac. She has never synched to the iMac.

How can she find the missing notes?

How can she prevent this from happening again?

What is listed under accounts?

At the top should be all accounts, and then underneath individual email accounts.

if she didn't create the note under an email account, then it will only show in all accounts.
