Missing my shortcut icon/button

I have an iPad 2 and I used to have a shortcut button (not sure what you call it) but I could turn the volume up/down, take screenshots plus other things. Now it's gone and I no idea how to get it back. I have tried longing off and restarting the iPad a couple times but that didn't help. I hope someone can help me.

I'm pretty sure you're talking about the Assistive Touch button. You probably turned it off ... somehow.

To turn it [back] on, go to Settings > General > Accessibility > Assistive Touch and turn the function on (the button turns green). Hopefully, it'll then appear and you can [re]program it for what you wish.
