Mail App

The email app seems to bypass the trash bin when a mail is deleted.
I found some reference to shaking the ipad to undo a delete but had left it too late.

Annoyingly it also deleted that email in my PC as well.

Suggestions?

The default Trash behaviour does vary with different accounts, but you can fine tune it by going to Settings - Accounts and then on to Advanced where you will see the various options.

All I could find in Settings/Mail was an "Ask before deleting" option which gives me a bit of space if I delete accidentally.

You have to to go the actual Accounts Settings where your individual Accounts details are. On IOS 11.2, it will say Accounts and Passwords.
