iPad memory management

I am puzzled by the iPad memory management. I have a game app I played largely out of Wifi, and made good progress. Game was not then in the Game Center folder. But each time I get Wifi again, I start at a very old game level. I then switch iPad off and disconnect Wifi when on again, the game then starts at the up-to-date level. I tried iTunes sync, moving the game into the Game Center folder, but no changes in behavior. Where is this old level coming from ? How can I get what seems to be in my iPad memory to override it?
