He's looking at you because if he were looking to the right you'd be able to see all of his ear and see the ear canal. Also you wouldn't be able to see his entire iris either, just half of it.

I tried it. It makes a very good lock screen wallpaper.

I know nothing about wheat farming, but I liked it too. It could be the photo on a loaf of bread or cereal box ;)
