I'm loving how many coconuts and mango my taxi runs are producing today..
Taking forever for my ET task as training them workers takes forever!! In the meantime I'm concentrating on making money and loving the 5 min milkshake and coconut flakes.

What level are you? I made mistakes purchasing some factories as they became available.
For example the toy factory...IMO it was a waste at the time. You need the oil refinery, paper mill AND sawmill to make the toys at the toy factory....which all use 8 trucks and given the time and materials aren't cost effective. Some of the profits GI has established make no sense, but I think the ones at the toy factory are the worst. One of the toys at the factory that takes the shortest amount of time to produce requires a fully upgraded oil refinery which is like a $720k upgrade from level 4. Not to mention you need fuel and wood trucks to operate the refinery and sawmill! I'm not suggesting don't get the factory, but I wouldn't recommend it until you have money freely pouring in....
...like from the food mill, which I wish I had purchased as soon as it was available. It too requires a few buildings (ranch upgraded to make meat), dairy farm (for cheese), farms (fruit) and a paper mill upgraded for paper as well as 8 trucks, but the production time and profit is good IMO and by the time you're able to buy it the buildings and trucks you need to operate it shouldn't be an issue.
Although the mine uses the same dump trucks you're quarry uses (so you may not be able to operate both at same time like I chose to do things) I highly recommend this factory. It's pure profit....nothing but the dump trucks are needed to produce things. With 3 dump trucks you can make sand in 10 min for about 500 profit or salt in 30 min with an upgrade and 4 trucks for about 700 profit. I wish I had this one sooner, I run it all day bc it requires little attention and no ingredients.
The weaving factory is good, belts take only 10 minutes, do however require 6 trucks but only need 2 flax (farm) and 1 leather (ranch) for about over 1000 profit. I've slowly upgraded this building and as I was saying some profits make no sense....I just fully upgraded my ranch to make down and just fully upgraded the weaving factory to make pillows with the down. The down takes 4 hours ( yield 1600 profit and uses 4 trucks to make) and the pillows (1 down, 2 cotton, 7 trucks) take 12 hours for over 4000 in profit. For the time it takes to make the pillows the profit doesn't match IMO.
The premium factories I bought are the waffle factor and bakery. You'll need the bakery to produce the croissants for the special achievement. Both factories require farms and the waffle factory requires a paper mill and confectionary factory for the sugar and dough production. Both premium factories I believe were good purchases...fast yields and steady profits.
Speaking of the confectionary factory....which I had purchased more than 1 earlier than I did. Which in turn means more than 1 dairy farm. Many times I could have used it...early on I was making muffins like crazy. They have a pretty solid yield considering what you need and how long they take.
Hope that helps...pretty soon a daily profit of 45k will seem like pennies!
PS I continue to crank out drivers so I can upgrade my terminal without delay. You might consider making one a night...you'll need about 50+'of them to upgrade the terminal to level 10, which is when you'll be able to get avocados. And pump out workers and engineers...you'll need them for the tower quest and with the list everyone has made you know exactly how many. Being able to instantly complete those tasks is nice! You have unlimited storage for staff (or so I believe) so the head start is nice, especially for terminal upgrades. Too many times I couldn't send out cars bc I was waiting to train drivers.
