I use iMovie. It's good for simple stuff, and you can add some Titles and transitions. The styles are limited, but sufficient for me.
There is a new app, Avid Studio, that has been getting a lot of attention lately. I haven't used it, but the descriptions sounds good, and the sites I frequent have mostly good things to say about it.
A brief scan of the reviews suggests you wan't an iPad 2 or latter to run it; but that is true of iMovie as well.
