Must add Air Video for streaming movies from my main box as well as Evernote and Note Taker HD as I love being able to jot down notes and ideas directly with my fingers.
Writing with your fingers on the iPad just feels so right!

I have several streaming audio apps and you just can't beat Pandora, but LastFM comes in a very close second. For picking up local content, my "go to" app is Pocket Tunes. Not only does it pick up local off-air broadcast stations (FM and some AM stations), it also has many HD streams. Because of this, I see no reason to buy a dedicated HD receiver (for home use) or a dedicated stream player like Squeeze Box. You can also listen to XM and Sirius content (with a paid subscription). It also picks up a ton of web-based streams. In addition to that, you can also record incoming content as well. Plus, you can also listen to local scanner activity (this varies widely by location).

Another nice feature is that they offer that ability to play incoming streams in the background using QuickTime. Once the stream opens in Safari, you can close Safari and use other apps thus allowing you to "multi-task" even before iOS4 comes out for the iPad.

Its not free, but worth $6.99... to me anyway.

I frequently use iBooks, Stanza, Evernote, Weather HD, ABC Player, USA Today, IM+...i also like Real Racing, TouchGrind..Sounhound is just an awesome little app, it is fast and the recognition function works amazing

Here is also a nice collection of the best ipad apps with some great choices...
