Changing controls on iCade.

I all, I've just got my hands on an iCade. I bought mainly to play games like street fighter. I only have one problem. How do I change the button layout to suit my gaming.
In game, I can hit the 2 red buttons and that allows me to open the menu to change the buttons but I can't do anything next.

Any help would be much appreciated.
