Will dummy earphone and dock jack protectors damage my iPad?

If you are talking about accessories specifically designed to plug into and protect those ports, they should be fine. It's things like coins, forks, knives, and other miscellanies junk that you might intentionally or accidentally stick into the port that they are warning about.
