Why are we so skeptical about new products?

I'm surprised about David Pogue's comment on The New York Times in 2007 regarding the iPhone ("Who on earth would buy this thing?"), but the thing is that I was as skeptical as David Pogue when the iPad was released... and now I have an iPad 2, which I use every single day.
