iTunes albums get split up when sent to iPad

This has happened several times. I copy a physical CD with multiple tracks into iTunes, then sync to my iPad 2. On the iPad 2 the tracks get split into several different "Albums" with the same name. Some albums have a single track from the original CD, some have several. There doesn't seem to be any rhyme or reason. When I Get Info in iTunes, every track has the same text in the Album field, but different text in the Artist field, which is correct since different artists perform different tracks. The "Album Artist" field is always blank. What is the "Album Artist" field, anyway? Most importantly, how can I re-consolidate the tracks back into a single Album on the iPad?
