I was wondering what type of note taking applications people suggest?

Welcome, from Cal! I use iNote and Pages, which really is not a note taking app, per se'.

INote was good on my iPad with iOS 4.
Sadly it is unusable with ios 5, because all content font is white, and unreadable.
