If you own an Apple Watch, your iPhone will download the watchOS automatically. Just go to the Watch app on your iPhone, select General, then Software Update.

You can't install an update on your Apple Watch through iTunes. You have to update your AW via iPhone.

When you see something like that in iTunes, it should download the software by itself. Afaik, you can't update your AW via iTunes. You need to do it on your iPhone.
