Sounds like you are posting from the Photos app.
iOS Photos is the default album when posting from the Photos app. You can change what album a photo goes to by tapping on the album name in the dialog and choosing. There does not seem to be an option to create a new album.
You can also comment, set the photo location, and set permissions on who can see the photo post.
