Trying to update to ois 5.1

Have been trying to update my iPad 2 to ois 5.1 for 2 weeks and cannot. I updated iTunes to 10.6, I tried a restore but it will not update. The last time I tried it said it would take 800 hours and that is when I stopped it, I am sure it would kept on going higher. I am at a loss on what to do.

I had to delete a lot of photos and apps that I could add back later to make room for the update. It won't let you if you don't have sufficient room for it.

Do it from iPad.  

Go to setting, general software update.  
