smart cover rubbing off?

Just the leather. It's dyed leather, so some color will rub off for a while, especially if you get it wet. Shouldn't' get on the screen as the inside is a microfiber cloth.

But that's just the nature of the beast with dyed leather. Shouldn't be any problem with the plastic ones.

Some kinds of leather dyes will rub off, for example, if you bought a DIY dye kit from the shops and applied it to a finished product, and cannot 'bake' the product to seal the dye in. However, if you are making a leather product in the factory and thus can dye and bake the leather *before* you stitch and produce the finished item, then there is absolutely no chance that the dye will rub off.

If Apple are producing a leather item which inherently has non-fast dye, then I would question their production methods (maybe they are cutting corners in order to roll out product faster). I have been owning and using leather products for over twenty years, and have never had a single finished item where the dye ever 'came off'.
