Is it possible to create a folder on my ipad 2 that will allow me to store apps and then password protect the folder so that i am the only person who can access the folder.

Unfortunately, no, this is not possible on a stock iPad.

If you were to jail break the iPad, then there are such tweaks available in Cydia (the jail breakers "App Store"). One tweak not only allows you to set a password on an app, you can also password-protect a folder. So, you could have double the protection!

But, not on a stock iPad. Sorry.

The tweak I'm talking about is AppLocker ($.99, USD). With it, you can lock apps, folders, home screen and more. Comes with an Activator toggle or you can get an SBSettings toggle (or both).

I've not put it on my iPad3 (it really doesn't leave the house), but I've not heard that people have trouble with it. As far as I know, it works well on/with iOS 5.1.1.

There are many more features to this than the brief bit I listed. So, have a full read on Cydia.
