I finally found an article that explains how to downgrade to a jailbreakable iOS version (as long as you saved your info with cydia last time you were jailbroken.

I followed this method with my iPod touch 2G. It took a couple tries to find something that would work, but I was able to go from whatever the latest release is down to something I could jailbreak. It works well!
