I have an IPad 1 It was given to me by someone else who was buying an iPad 2 and I have all of there contacs how do you delete all of them I would like my own instead of there's

The best way to make that iPad yours is to do a full restore on it. This will put the new iOS 5 firmware on it and you'll be back at the beginning, just as if the iPad came out of the box.

Truthfully, that's how your friend should have given that iPad to you. Because, all the apps on it are his (or hers) and they don't transfer. Life's much easier with used iPads if you start back at the very beginning - just as if it came from the store.
