I have three different sites that have my user name and password stored on them but they no longer automatically log in when I press go. It also does not allow me to erase the site and re enter my user name and password

Hi and welcome to the Forum!

Have you deleted your History or cookies in Safari recently? As this will delete all past logins. Where you say it doesn't allow you to erase the site has me a little baffled here. When you press the URL you should have an X pop up on the right to be able to erase the site. This is not happening? Try closing the app completely and relaunch it. From the home screen do the four finger swipe up or double press the home button to reveal your multi task bar. These are all the apps that you have opened at one time. Long press the app until it jiggles and a red minus sign will appear above it. Press the minus sign, this will close the app, not delete it, now press the home button to return to your screen. It's also a good idea to close all these apps, as it helps the iPad run smoothly. Have a look and see if you can now access your sites. Let us know how you go.

Leelai makes great suggestions.

I would only add that you check that private browsing has not been enabled as private browsing does not store cookies or other sign on data for websites even if you elect to save your credentials at the website level.
