Try a reset. It may help. Some apps that are not yet updated for iOS 5 may still have problems, as Maverick seems to have noticed. ;)

Reset: Hold down the power and home buttons until the Apple logo appears. The iPad will reboot. This usually takes a bit longer than a restart.

Reset might not help, u need to b patient to wait for updates of your individual apps

Pages, numbers, and keynote specifically crash for me. I open them, they have that gray background saying pages, it'll stay like that for 5 seconds, crash, but when I reopen it, it works fine.

I'm getting the same as Sonicrobby. These Apple apps are crashing very frequently. Calendar too. Maybe something to do with iCloud integration?
It's so bad I'm beginning to think I should've waited for 5.1

I have a lot of apps on my iPad2 (over 200), but I'm not experiencing any sort of escalation in crashes.

I've always thought of iOS4 as the Apple equivalent of Windows 3.1; iOS5 is like Windows 95 - an improvement, but requiring much more processing power and memory. So running iOS5 on an iPad1 is like running running Windows 95 on a 486-50Mhz machine instead of a Pentium - you can do it, but it won't be pleasant.

...wow I'm old... ;)

You're lucky. My iPad 1 has memory crashes frequently since the upgrade, unless the taskbar is kept almost completely empty.

Same problem here, Apple needs to do a better job insuring that new versions of iOS don't break all the apps out there or people are going to stop upgrading.

I've got an iPad 1 but my apps aren't crashing. Have you guys reset your iPads? That's seems to clear anything wrong.
