Probably a little better but I'm not really sure as the older Pros were also very responsive.
I actually don't have an Apple Pencil so I can't comment on that.

In fact I just read that the responsiveness on the new iPad pros, when using the Apple Pencil is so quick that it's indistinguishable from a real pencil or marker!
My understanding is the pencil is the same but the responsiveness is increased on the new ipads' displays due to the higher refresh rate: 120 Hz vs 60 on the older iPad pros...
Yes. I plan to get some hands on time with the 10.5 in the store before pulling the trigger but I can't imagine that the minor weight and size increase is going to sway me against purchasing it. Maybe you could try the same and test out the difference in-store before making a decision... I will...
Personally I would say, go with the 10.5".

Today I picked up an Urban Armor Gear case for my iPad Pro 9.7". It's pretty good for the price: $59.99 at BestBuy (where I got it), in Cobolt. They also had it on sale for about $55.00 in Black but I wanted the Cobolt for the extra 5 bucks... I have the pretty much identical case for my iPad...
